Happy almost July!!
Only 178 days until Christmas. LOL Can you believe it? Sorry, I just couldn't resist.
I also can't believe how fast this year is going. He is crazy!!

My favorite holiday of the year is coming up: the 4th of July. I grew up absolutely LOVING fireworks because in my hometown of Wickford, RI, they always had (and still do!) a fireworks show on July 3rd. I'm an only child and my parents told me every year that they were my fireworks because it's my birthday. Of course, when I was little I believed them, not knowing that we were actually celebrating Independence Day.

To this day, my birthday isn't complete if I don't see someone on the 3rd. I'm still spoiled, what can I say. πŸ˜‚ I won't be making my own cake, nor will anyone else. The 56 year long tradition continues with a Carvel Ice Cream Cake, a favorite of mine for sure.

Do you have a fresh recipe that requires fresh ginger? Don't peel it with a knife, use a spoon! Yes, believe it or not, the peel of ginger root peels off more easily simply by running a spoon over it, rather than a small knife or peeler. Fits well in corners and crevices. I couldn't believe it either the first time I did it.
