15-Minute Soba Noodle Soup

Soba noodle soup – the easiest and fastest Japanese soba soup ever. It takes 15 minutes and restaurant quality, so delicious!

Instructions

  • Heat a pan of water and bring it to the boil. Cook soba noodles until al dente, about 5 minutes. Drain and set aside in a bowl.

  • Meanwhile, heat 1 1/2 cups water and bring to a boil. Add Mizkan soup base (bonito flavor), mushrooms and bok choy. Boil for about 1 minute, or until cooked through.

  • Add the egg on top of the soba, then add the soup and garnish with sesame and scallions.

Notes

Mizkan Soup Base (Bonito Flavour) is a magical seasoning that you can use to prepare a variety of authentic Japanese dishes: cold sauce for soba, broth for noodles such as udon and soba. You don't need to make dashi from scratch when using Mizkan Soup Base (Bonito Flavor).
