What to serve with this dish?

I like to serve the Bistec a Caballo with white rice to soak up the delicious tomato sauce, avocado and ripe plantain on the side. A simple green salad is also a perfect side dish for this dish.

Beef: I recommend using skirt or flank steak for this recipe. If you prefer, use sirloin tip.

Oil: Use canola, vegetable or olive oil.

Vegetables: Garlic

Spices: I like to use yellow mustard to marinate the meat, but you can leave it out if you don't like the taste. Oregano, ground cumin, salt and pepper.

Herbs: Coriander or parsley.

Sauce: I use my hogao recipe.

EggFried eggs are a must for the traditional recipe of Bistec a Caballo.

Bistec a Caballo (Creole Horse Steak) Recipe

  • 2 pounds sirloin or fillet steak trimmed and cut into 4 equal portions
  • 1 ½ spoons olive oil
  • 1 clove of garlic chopped
  • 2 spoons mustard
  • 1 teaspoon dried oregano
  • 1 table spoon cumin powder
  • Salt and black pepper
  • 2 spoons fresh coriander chopped
  • 1 cup Hogao
  • 4 fried eggs


  • Place the steaks between sheets of wax paper, then pound them until they are about ¼-inch thick.

  • Place the pounded steaks in a zip-top plastic bag. Add mustard, oregano, cumin, garlic, coriander, salt and pepper. Refrigerate for 1 hour or overnight. Make sure the steaks are evenly covered.

  • In a large skillet, heat the olive oil over medium heat. Place the steaks in the skillet and cook for 3 minutes per side.

  • To serve: Pour the hogao over the steaks and garnish with a fried egg.
