What is it Chicken broth with potatoes?

It is a simple soup popular in Colombian homes. Chicken and potatoes are simmered in a delicious broth flavored with garlic, onions, shallots and cumin. It's all about the garnish, my mother said. Always served with fresh coriander leaves, avocado, chili and lime juice.

I still eat chicken soup to this day when I'm not feeling well and need comfort, the only difference is that now I have to make it myself!

Vegetables: Garlic, onion, shallot and potatoes.

Herbs: Fresh coriander or parsley.

How to make this chicken soup

Place the chicken in a large pot with the cumin, salt, pepper, and chicken broth. Place the garlic, onion and shallot in a blender with ¼ cup water and blend. Add this mixture to the pot.

Bring to the boil, reduce the heat and simmer for about 25 minutes.

Add half the coriander and potatoes. Season with salt and pepper and cook for about 15 to 20 minutes longer or until the potatoes are tender.

Remove the chicken from the pan, debone it, break the meat into bite-sized pieces and return the meat to the soup. Sprinkle with chopped coriander and serve hot.

How to store this soup

This chicken and potato soup can be stored in the refrigerator for up to 3 days in a sealed container. If you don't like coriander you can replace it with parsley.

  • 2 large chicken breasts bone inside
  • 12 cups chicken broth More if necessary
  • 1 teaspoon cumin powder
  • 5 garlic cloves
  • 1 cup of onion cut into cubes
  • 6 shallot chopped
  • ½ cup of chopped fresh coriander
  • 1 pound of potatoes peeled and cut into pieces
  • Salt and pepper to taste

Instructions
