Cheesy Ranch Chicken Foil Packets

Foil packets, also known as tinfoil dinners, are perfect for summer meals. You make them ahead of time and cook them when they’re ready. They can be cooked in the oven, on a grill, or even over an open fire, making them perfect for camping. And you know those grills at the park? These are perfect for them too! They’re self-contained, so you don’t have to worry about how gross the grill is. Anyone else worry about this?

This recipe is all about the sauce. This savory ranch sauce tenderizes the meat and adds a lot of flavor to both the chicken and veggies. And who doesn't love ranch? It's a classic flavor combination for a reason.

  • Chicken breast: This is a very simple option that requires no finishing. You can use chicken thighs if you prefer, but thighs will take longer to cook.
  • Red potatoes: Make sure you slice them thinly so they cook at the same rate as the chicken. If they are too large, you will end up with a raw and partially crispy potato.
  • Other vegetables: You can mix and match the vegetables to your liking. Zucchini, carrots, or even whole garlic cloves would work well in a foil packet.
  • Sauce: All of these ingredients play an important role in making the perfect sauce.
  • Parmesan cheese: It adds a nice savoury note, but you can replace it with cheddar or mozzarella.

Types of potatoes

Red and golden potatoes with thin, edible skins are best for foil packets. When using potatoes, be sure to slice them thinly so they cook at the same rate as the chicken. Alternatively, you can also cut them into 1/2-inch cubes. If you leave the potato pieces too large, you will end up with a partially crispy, raw potato, and no one likes that.

Instructions for cooking on the campfire

Place them on the hot coals and cook for 20-30 minutes, turning them once halfway through cooking, until the meat is cooked and the vegetables are tender.

Storage and heating instructions

Refrigerate in an airtight container for up to three days.

Heat up placing it in a foil bag and placing it in a preheated oven at 300 degrees until it is completely heated, about 10-15 minutes.
