Chingiri Paturi Recipe

  • To get started with the Chingiri Paturi recipe, start by soaking the khus khus for at least 3 to 4 hours or overnight.

  • Wash and clean the prawns well in salted water to eliminate the fishy smell.

  • In a grinder jar, take soaked khuskhus, mustard seeds, green chillies and grated coconut. Grind to get a thick and smooth paste.

  • Add salt to taste and mustard oil in the paste. Mix well and keep aside.

  • Heat 2 cups of water in a pan and add a few drops of lemon juice and 2 pinches of salt.

  • As soon as the water starts to boil, add the prawns, turn off the heat, remove the pan from the heat and set aside for a few minutes.

  • The prawns will blanch and will also be properly cleaned. After a while, drain the water and collect the prawns and set aside.

  • Heat the mustard oil in a non-stick pan and sauté the prawns for 2-3 minutes. Divide the prawns into four equal parts and set aside.

  • To prepare leaf parcels, first take a banana leaf and heat it on the stove very carefully from both sides. Keep the leaf away from flames to avoid getting burned. By doing this the leaf will soften and fold easily like fabric without tearing. Do this for all the pieces of leaf and set aside.

  • Now take a piece of banana leaf and place the khuskhus paste in the centre.

  • Now add a portion of sautéed shrimp to the pasta. Mix gently so that the paste covers all the prawns.

  • Add some paste over the prawns and around the mustard oil on top.

  • Carefully fold the two opposite sides of the leaf inwards and then the next two sides inwards to form little parcels.

  • Tie the package crosswise with thread and tie a knot. Form other parcels following the same method and set aside.

  • Heat a non-stick pan with a lid. Brush some mustard oil all over.

  • Place the parcels on the pan and cover with the lid.

  • Steam the packets over low heat for 10 minutes or until you notice the color of the leaves changing.

  • Carefully turn the parcel and steam the other side too. This may take 15-20 minutes in total.

  • Turn off the gas, carefully transfer the parcels to the serving dish and serve hot with plain steamed rice.

  • Do not open the package before serving, whoever is preparing to taste this delicacy will have to open it.
