A simple creamy cherry strudel is easy to make but so impressive to serve! The puff pastry is filled with cherries and Italian custard, then baked until golden brown.

The best part is that this recipe doubles as the easiest Danish breakfast you'll ever make, but it can also be served as an amazing dessert with a scoop of no-churn vanilla ice cream.

Recipe ingredients

  • Browse: When I have time I use homemade puff pastry. Store-bought frozen puff pastry, thawed but still cold, works great too!
  • Custard: Remember to prepare this Italian custard at least two hours in advance so that it has time to cool. You will only need half of the recipe.
  • Cherries: Fresh cherries pitted and then cut in half.
  • Milk: It will be used to brush the shortcrust pastry before cooking.

Variations

  • Sprinkle with almonds: I love this touch of crunchy texture added to my apple cinnamon strudel!
  • Add a glaze: Add a simple powdered sugar frosting, cream cheese frosting, or almond frosting.
  • Use a different fruit: Try a different berry! Strawberries, blueberries, blackberries and raspberries would all work well.
  • Creamy filling: Instead of custard, try ricotta or cream cheese. If you use one of these, I would use sugared cherries.
  • Flavored custard: Variations that would work include lemon custard or for something truly decadent try chocolate custard!
  • Sweetened fruit: If you like a sweeter filling for your strudel, use canned cherry pie filling. You could also make cherry pie filling by boiling fresh cherries with sugar and cornstarch.

How to prepare creamy cherry strudel

To start, prepare the Italian custard and let it rest in the refrigerator for at least two hours. Roll out the puff pastry on a baking tray lined with baking paper then divide it in half lengthwise.

Cover half of it with the custard and cover with the pitted and halved cherries.

Place the remaining half of shortcrust pastry on top and seal the edges well. Brush the surface of the shortcrust pastry with milk and bake until golden. Let cool slightly then dust with icing sugar and serve.

Tips for the best cherry cheese strudel

  • Prepare the Italian custard in advance: This custard can be made up to 3-4 days in advance! This is a huge time saver when it comes to assembling your strudel.
  • Try the cherries: The taste of cherries can range from sweet to tart! If yours are sweet, you could season them with lemon juice and if they are too tart, you could season them with sugar.
  • Egg washing: For a golden surface, instead of milk, brush with a beaten egg before baking. Simply combine 1 egg with a teaspoon of water and brush on top before baking.
  • Parchment: Line the baking tray with baking paper so you can easily remove the dough from the tray for slicing!
  • Add Slots: This simple cherry strudel recipe can be designed in many unique ways! Add slits to the top before baking, or add slits to the top of the dough and create a crisscross pattern when covering the bottom half. Get creative!

What is a strudel?

The strudel is made with a thin pastry filled with fruit for a simple dessert or you can also use a savory filling like in my strudel with sausage, cheese and mushrooms. It is baked until golden brown and the puff pastry layers add the best flavor to the recipe it is used in!

Cool completely to room temperature, then store leftovers in an airtight container in the refrigerator for up to four days.

Can I freeze this creamy cherry strudel?

Unfortunately no. The custard in this strudel does not freeze well and will change consistency as it defrosts. If you use cream cheese or ricotta you can freeze it whole or in slices.
