Quick and easy chicken in a creamy Dijon mustard sauce!

  • 1 pound boneless, skinless chicken breasts (or thighs), pounded thin
  • Salt and pepper to taste
  • 1/4 cup flour (optional) (gluten-free for gluten-free)
  • 2 tablespoons butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth (or white wine)
  • 1 cup heavy/whipping cream
  • 2 tablespoons Dijon mustard
  • 1 tablespoon grainy mustard
  • 1 tablespoon chopped tarragon (optional)
  • Salt and pepper to taste
  1. Season the chicken with salt and pepper to taste and lightly flour it.
  2. Melt the butter in a pan over medium heat, add the chicken and cook until lightly browned on both sides, about 2-4 minutes per side, before setting aside.
  3. Add the onion to the pan and cook in the butter until tender, about 3 to 5 minutes.
  4. Add the garlic and cook until fragrant, about a minute.
  5. Add the stock and deglaze the pan by scraping up any brown bits from the bottom of the pan with a wooden spoon as the stock sizzles.
  6. Add the cream and mustard and stir before returning the chicken to the pan, bring to the boil, reduce the heat and simmer until the sauce thickens, about 5 minutes.
  7. Stir in the tarragon, season with salt and pepper to taste and enjoy!
