I love when you can eat a treat that's actually good for you! This gluten-free quick bread recipe is high in protein, thanks to almond flour and eggs, is gluten- and dairy-free, and has some superfood qualities thanks to Goji berries.

Goji berries have been used as a medicinal food and supplement for over 2,000 years. Thanks to their high levels of antioxidants, they help protect your eyes, fight inflammation, improve skin health, stabilize blood sugar, and have been shown to improve depression, anxiety, and sleep. There's a lot of power in some tasty little berries!

I get mine from BareOrgaincs, they are organic, vegan, gluten-free and non-GMO. I love the sweet-tart flavor and I think they work so well in this bread recipe – a nice balance with the chocolate chips.

  • Preheat oven to 325 degrees. Grease a 9×5-inch baking pan or line with parchment paper.

  • In a large bowl, whisk together the almond flour, cornstarch, baking powder, and salt.

  • In a separate bowl, mix the eggs, maple syrup, melted coconut oil, vanilla extract, and almond milk until well combined. Pour the wet ingredients into the dry ingredients and mix until well combined. Be careful not to overmix. Stir in the goji berries and vegan chocolate chips.

  • Pour the mixture into the previously prepared mold and distribute it evenly. Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

  • Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
