curry fried rice

This is a simple curry fried rice with scrambled eggs, vegetables and shrimp. It's a well-balanced homemade curry fried rice. Curry has been my favorite condiment for years.

Although curry is not native to China, it is very popular here. We have many curry dishes, including beef curry, chicken curry, pasta curry and my favorite, fish ball curry.

Fried rice is one of the most popular staples of Chinese cuisine. It can be as simple as egg fried rice or as luxurious as yang chow fried rice.

It can also be super creative by adding different side ingredients, like fried rice with spam and seaweed or crispy pork belly as protein.

For the vegan or vegetarian version you can replace prawns and eggs with scrambled tofu. I love making this version on warmer days.

ingredients

  • 2 cups leftover rice: Leftover long-grain rice, like jasmine rice, is my favorite ingredient for fried rice.
  • 2 tbsp. corn: the sweetness of corn can match the natural sweetness of shrimp
  • 3 tbsp. kitchen oil
  • 2 tbsp. diced carrots: Add a nice orange color
  • 1/4 red onion, diced
  • 200g prawns (12)
  • 1 small piece curry paste, crushed well before adding
  • 2 eggs
  • 4 teaspoons. light soy sauce
  • Shallot, chopped

Features

  • Add about 1 tablespoon of hot water to curry paste. Stir to dissolve the paste. Add the light soy sauce.
  • Fry the prawns until tender. Then add the corn and carrots and fry them until soft.
  • Add the vegetable cooking oil, pour in the egg liquid and then break it into smaller pieces.

  • Then add the leftover rice, corn, carrots, shrimp and chopped red onion.
  • Finally add the curry paste and light soy sauce and mix everything well.

What to serve with

My favorite way to serve with different types of fried rice is bubble tea. But it's not a healthy choice.

Pairing it with healthier options like blanched bok choy and crushed cucumber salad will be much better for health considerations.

  • 2 table spoon. corn
  • 2 table spoon. carrots cut into cubes
  • 1/4 Red onion cut into cubes
  • 100 G Donze shrimp
  • 3 table spoon. curry paste smashed well before adding
  • 2 egg
  • 1 table spoon. light soy sauce
  • shallot
  • 2 cups leftover rice
  • 3 table spoon. kitchen oil
  • Add about 1 tablespoon of hot water to the curry paste. Stir to dissolve the paste. Add light soy sauce.

  • Add a little oil and fry the shrimp until they become ambiguous. Transfer immediately to avoid overcooking.

  • Then add the corn and carrots and fry them until soft.

  • Add extra vegetable cooking oil, pour in the egg liquid and then break it into smaller pieces.

  • Now add the leftover rice. Mix well with the scrambled eggs.

  • Add the fried shrimp, carrots and onion. Add the curry paste and light soy sauce. Mix everything well. Sprinkle some chopped spring onion and serve hot.
