To begin with, let's first mix the wet ingredients – oil, curd (yogurt), milk and jaggery powder. And then we add the dry ingredients like aata, baking soda and baking powder. And then mix everything. And yes, we shouldn't over mix after adding these dry ingredients.

The curd in the batter makes the cake very soft and moist inside once baked. The baking soda and powder make it rise and become light and fluffy.

Finally, before baking, garnish with some chopped almonds. This gives a nice crunch and flavor on top.

  • 1 cup Curd
  • 1/4 cup Milk
  • 1 cup Jaggery powder
  • 1 1/2 cup wheat flour
  • 1/2 teaspoon Sodium bicarbonate
  • 1 teaspoon Baking powder
  • Almonds for condiments
  • In a bowl first add oil, curd, jaggery and milk. Mix well.

  • Now add the dry ingredients like maida, baking soda, baking powder and mix well until well blended. Do not over mix.

  • Complete it with the chopped almonds.

  • Bake in a preheated oven at 180°C for 55 min.

  • After baking, place the cake on a wire mesh for at least an hour, until it has cooled completely.

  • So the tasty cake is ready to cut and enjoy.
