Goan Vegetable Curry Recipe

  • To start preparing the Goan vegetable curry recipe, clean and cut the vegetables into cubes.

  • Add the oil to a thick-bottomed pan and add the onions. Cook until onions become translucent.

  • Add remaining vegetables, turmeric powder, green chillies and required amount of water. Cook over medium heat until cooked through.

  • Meanwhile, grind all the ingredients mentioned under masala including coconut, dry Kashmiri red chillies, whole black peppercorns, onion, garlic, coriander seeds, cumin seeds, tamarind to a smooth paste.

  • Add the masala paste and salt to the cooked vegetables. Simmer until the raw smell of the curry disappears and keep stirring in the meantime. It will take about 5-7 minutes.

  • Turn off when the curry is cooked properly. Serve hot.

  • Serve Goan Vegetable Curry Recipe along with Beetroot Raita and Whole Grain Lachha Paratha for a weekday meal.
