Ingredients for Chicken Caesar

You think the restaurant's staple dish has to be complicated. We break down the marinating, grilling, and assembling of this iconic salad, ensuring every bite is a fusion of smoky, creamy, and crunchy goodness.

  • Skinless, boneless chicken breasts or chicken thighs
  • Grilled Chicken Marinade
  • Romaine lettuce, chopped
  • Parmigiano Reggiano flakes
  • Toast
  • Salt and pepper to taste – we love red bell pepper for this salad.
  • Creamy Caesar Salad Dressing

How to Make Caesar Salad with Grilled Chicken

Many grilled Caesars actually grill the romaine. We skip this part, not because grilled romaine isn’t delicious; it is. But because we wanted the greens to be extra crispy and crunchy.

  1. Preparing the chicken:
    • Remove the chicken from the packaging and pat dry.
    • Spread the chicken out to an even thickness and let it marinate for 6-8 hours in the refrigerator.
  2. Grilling the chicken:
    • Preheat grill to medium-high heat, about 400°F for indirect heat. See our recipe card notes for charcoal or gas grills.
    • Remove the chicken from the marinade, pat dry and grill on the hot grill until cooked through and reaches 160°F (76°C).
    • Let the chicken rest before cutting it into bite-sized strips.
  3. Assemble the salad:
    • Prepare the Creamy Caesar Dressing or use your favorite bottled version.
    • Toss the chopped romaine lettuce in a large bowl with half the dressing, adding more if needed.
    • Add the grilled chicken slices, grated parmesan and croutons.
    • Season with salt and freshly ground black pepper to taste.

Caesar Salad Recipe Tips for Carnivorous Girls

  • Marinade: Leave the chicken to marinate long enough for it to fully absorb the flavors.
  • Grid setup: use indirect heat to avoid burning and ensure even cooking. Transfer the chicken to the hot side of the grill when it is almost at temperature to seal in a good char and flame-kissed flavor.
  • Rest: Let the chicken rest after grilling to keep it juicy.
  • Prepare your grilled croutons. Slice a baguette and drizzle with olive oil. Grill the bread until crispy and let it cool before cutting into bite-sized pieces. When it comes to store-bought croutons, we really like the Fresh Gourmet brand seasoned croutons. We buy them in large bags at Costco to save money.

How to serve this Caesar salad

Serve this grilled chicken Caesar salad immediately after assembling it on platters or bowls, perfect for a summer lunch or light dinner. A classic Caesar is simple, with just lettuce, parmesan cheese, dressing, and chicken. You can add extras like sliced avocado and cherry tomatoes if you want to make it more substantial.

It pairs wonderfully with a glass of chilled white wine, such as Sauvignon Blanc, or a crisp summer beer.

Leftovers

Dressed salad doesn't keep well as leftovers. Lettuce wilts quite a bit. But you can store leftover grilled chicken, wrapped in foil, in the fridge for up to 4 days. Just make a new salad (or wrap) when you're ready to use the chicken leftovers.

With this recipe for Grilled Chicken Caesar Salad, you have everything you need to whip up a quick and delicious meal that will impress any occasion. Whether you're hosting a casual backyard barbecue or a more formal dinner party, this salad is sure to delight your guests with its perfect mix of flavors and textures.
