This grilled chicken sandwich isn't your average chicken breast in a burger bun. Nope! This one features tender, juicy grilled chicken pieces piled high on grilled ciabatta bread.

It is topped with a ball of burrata that is squashed between bread with grilled sweet peppers, spicy honey and freshly ground black pepper. Fresh basil and arugula complete the mix.

It tastes like one of those fancy sandwiches you find in a fine restaurant, but it's easy to make at home too.

How to Make a Grilled Chicken Sandwich

Heat the grill to medium-low heat, about 300°F, with the direct heat zone.

  1. FIRST STEP: Using a meat tenderizer, pound the chicken pieces until they are about 1/4 inch thick.

  1. STEP TWO: Place the strips in a bowl and season with olive oil, balsamic vinegar, salt and pepper. In another bowl, season the peppers with oil, salt and pepper.

What to Serve with Grilled Chicken Sandwiches

This grilled chicken sandwich is best served right away, when the cheese is melted and the lettuce is still crunchy.

I love it with a side of Terra veggie chips or sweet potato fries. Since this sandwich has some Italian flavors, it also pairs well with a pasta salad.

This sandwich does not store very well because it gets soggy. If you want to save leftovers, store each component separately in an airtight container in the refrigerator for up to three days. Then, assemble your sandwich when you are ready for the leftovers.
