Grilled Vegetable Skewers

When we plan to grill our main course, I usually add a side of grilled vegetables to cook the entire meal outdoors. These easy vegetable skewers are one of our favorite summer vegetable sides. The flavor of the vegetables is enhanced when grilled, and the light char and dressing of olive oil, garlic and balsamic vinegar elevate them even more.

I like to use peppers of various colors in my skewers, including chunks of red onions, zucchini, and summer squash. If I have them on hand you can also include mushrooms in the mix. These skewers are delicious freshly baked or at room temperature. I like to drizzle a little extra virgin olive oil on the skewers once they're done cooking, and sometimes I stir in a little basil pesto with olive oil to drizzle the vegetables before serving. I could easily make an entire meal with these grilled veggies served alongside some cream cheese and crusty Italian bread.

ingredients

  • 3 medium red onions

  • 2 medium courgettes

  • 2 medium summer courgettes

  • 2 red peppers

  • 2 orange peppers

  • 2 yellow peppers

  • Fresh Basil Leaves

Olive oil sauce:

  • 1/3 cup olive oil

  • 2 teaspoons of Balsamic Vinegar

  • 4 cloves of garlic minced

  • 1 teaspoon dried oregano

  • 4 tablespoons finely chopped fresh parsley

  • Salt and pepper to taste

Instructions

    1. If using bamboo skewers, soak them in water for at least 30 minutes before using.
    2. Peel the onions, cut them in half, then cut them into 2-inch pieces.
    3. Seed and discard the membranes of the peppers and cut them into 2-inch pieces.
    4. Cut the zucchini and summer squash into 1/3-inch slices.
    5. Arrange the vegetables on the skewers, alternating each of the individual vegetables and the basil leaves.
    6. In a small bowl, whisk together the olive oil dressing ingredients.
    7. Preheat grill to medium-high heat.
    8. Cook skewers 5-7 minutes per side until lightly charred and softened.
    9. Brush the skewers with the olive oil sauce.
    10. Remove the vegetables from the skewers and serve warm or at room temperature.

Notes

It can be prepared the night before.
