Healthy Oatmeal Energy Bar With Dates & Nuts Recipe

  • To prepare this recipe for energy bars with oats, dates and walnuts, first chop the assorted nuts.

  • Process dates in a kitchen robot until it is roughly cooked. It should form a “dough” like consistency and will roll into a ball.

  • Dry toast or toast the oat flakes in a no stick pan for a few minutes until its color changes to light brown. Be careful not to burn the oats.

  • Place the oats, chopped walnuts and dates in a bowl and set aside.

  • In a small panheat honey and peanut butter over low heat. Stir and pour over oat mixture and then stir, crumble dates until well combined.

  • Once mixed well, transfer them to a plate/tray lined with foil/baking paper so that they lift out easily. Press down until they flatten evenly. Cover with foil/baking paper or cling film and leave them to solidify in the fridge or freezer for 25-30 minutes to harden.
