Herbed Dinner Rolls Recipe

  • To begin preparing the recipe for soft sesame and herb rolls; in a large bowl or the bowl of a stand mixer, combine all the dry ingredients; then all the wet ingredients and beat using the paddle attachment until the dough comes together. Continue to mix until you notice that all the ingredients are well combined.

  • Now place the dough on a floured surface and knead with a stretch-and-fold motion until smooth and elastic, about 10-12 minutes. Place the dough in a greased bowl. Cover and let rest and rise until doubled in size, about 2 hours.

  • Once the dough has risen, deflate it and divide it into 20 portions. Shape each portion into a ball or whatever shape you want. Place them on greased baking sheets about two inches apart.

  • Cover the shaped portions and let them rest and rise until they double in volume for another half hour.

  • Once risen, brush all the portions of dough with egg yolk and sprinkle the surface with a little sesame seeds.

  • Preheat the oven to 180°C and bake the risen and shaped dough for about 25 minutes, until golden.

  • Once the herb sesame buns are cooked, remove them and place them on wire racks to prevent the bread from sweating. You can serve them about 10 minutes after letting them rest or let them cool completely, wrap them in butter paper and store them.
