How to Make Scrambled Eggs with Tomatoes, Spring Onions and Corn

In a medium nonstick skillet, heat the butter and oil over medium heat. Add the tomatoes and spring onions and cook for about 5 minutes, stirring occasionally. Add the corn, stir and cook for about 2 minutes more.

Meanwhile, in a small bowl, whisk together the eggs and salt. Add the eggs to the pan with the tomato mixture and cook over medium heat, without stirring, until the mixture begins to thicken. Stir twice or until the eggs are mixed with the tomato and spring onions and cook for about 2 minutes or until the eggs are as firm as you like. Transfer to a serving platter and serve warm.
