When you walk the streets of Hong Kong, you may find that lemon tea is the most popular drink. It is also my favorite summer drink. Let's learn how to make a refreshing iced lemon tea in 15 minutes. I use two bases: traditional black tea and Thai green tea.

The base of tea

Lemon tea is usually paired with black tea. The strong, tart flavor of lemon can pair well with the strong flavor of black tea, making it a cool, but not overly sweet, drink in the summer.

However, we have tested with other types of tea bases, including oolong tea, jasmine green tea, or even Thai green tea.

Hong Kong Style Lemon Tea

Hong Kong Style Lemon Tea, also known as dong ling chahas become extremely popular recently. It uses fresh lemons instead of lemon juice. With this method, the zest and oil from the lemon peel can infuse the tea, creating a deeper citrus aroma and flavor. So, we will be making this version here.

Rock Sugar Syrup

In Hong Kong, rock sugar syrup is the most popular accompaniment for lemon iced tea. To make it, add rock sugar to a small pan and add enough water to cover. Simmer until dissolved. You can use honey simple syrup or syrup of your choice to replace the rock sugar syrup.

By the way, do not reduce the amount of syrup otherwise the tea may taste slightly bitter.

Steep the tea base: Add water to the tea mixture. If using black tea, add boiling water. Cover and steep for 10 minutes.

Strain the tea base. I like to add a few ice cubes to quickly chill the base.

Lemon

This time I mix lemon and lime to enhance their flavor. Yellow lemon has a strong sour taste, while green lime has a strong aroma. This time I tried two combinations: 2 slices of yellow lemon + 3 slices of lime and 3 slices of yellow lemon with 3 slices of green lime.

Place the lemon and lime slices along with the ice cubes in a shaker glass and use a muddler to separate the lemon juice and flavorings from the peel.

Pour the black tea base and add the syrup. Mix well by shaking or stirring. Then transfer to serving cups.

  • 1 long lime
  • 300 ml Hot water
  • 2 tablespoon. rock syrup or other syrup
