This recipe is for a perfectly grilled burger, Juicy Lucy style. Following classic Minneapolis tradition, my grilled Juicy Lucy burger is a simple, cheesy burger full of goodness.

The secret of my recipe is all in the cheese. I'm using 3 types of cheese for this Lucy. The American cheese gives you the classic diner burger flavor, the mozzarella brings the epic cheesy pull, and the sharp cheddar is there for a robust cheesy presence. The three come together for the tastiest, juiciest Lucy burger you'll ever eat.

You don't have to travel to Minneapolis to get a Juicy Lucy. Making it at home is quick and easy. Simply put some cheese on a patty and go to town.

What is a Juicy Lucy Burger?

A Juicy Lucy burger is the most amazing cheeseburger you'll ever eat. Instead of melted cheese on top of the burger, the cheese in a Juicy Lucy is cooked INSIDE the meat, releasing a stream of delicious goodness with every bite.

Juicy Lucy burgers are Minnesota's signature burger. Also known as the “Jucy” Lucy, this burger originates from south Minneapolis, and two bars claim to have invented the tasty burger. Matt's Bar and The 5-8 Club have an ongoing rivalry over who serves the “original”, with Matt's Bar filling them with American cheese and calling it Jucy Lucy (without the “i”), and The 5-8 Club calling them serves with various cheeses and spell them with an “i”.

Ingredients for this recipe

To make these super cheesy and incredibly melty burgers, you only need a couple of ingredients and then you're ready to go. Here's what you need to get started:

  • 2 lbs Ground beef (preferably 80/20 meat/fat ratio)
  • 2 tbsp Hey Grill Hey beef rub
  • 6 slices American cheese
  • 6 slices mozzarella cheese
  • 6 slices sharp cheddar cheese
  • 6 hamburger bun

Feel free to add your favorite burger toppings if you like, or just enjoy these incredibly cheesy burgers as is.

How to make a juicy Lucy Burger

Ready to create your own? Find out how easy it is to grill a Juicy Lucy at home.

  1. Prepare the meatballs. Unlike a regular burger, the Juicy Lucy requires a little time and preparation to get ready before hitting the grill. Divide your meatballs into equal portions and place half of the meatballs into small bowls with raised edges. Place cheese inside, add a top patty and pinch to seal.
  2. Season. Season all sides of the patty with my Signature Beef Rub. If you don't have any of this on hand, you can also use equal parts salt, pepper and garlic powder.
  3. Grill. With your grill preheated to 400 degrees F, grill burgers over indirect heat for 6 minutes, flip and continue grilling until burgers reach an internal temperature of 160 degrees F. Place buns on grill and toast to desired doneness.
  4. To assemble. Place your cheese patty on a burger plate and top with your favorite toppings and condiments. This burger is great with simple lettuce, tomato and onion.

Tips for making a juicy Lucy Burger

Before you try making your own Juicy Lucy burger, I have a few tips to help you make your burgers the best of the best.

  • Cook over indirect heat. The burgers will cook a little slower than over direct heat, but they will shrink less and the cheese will explode on the side.
  • Form meatballs larger than sandwiches. This way you won't end up with too many buns for your burger.
  • Flip only once. Use a metal spatula instead of a fork or tongs. Quickly slide under the burgers and turn them only once. You will need to move them as little as possible to keep the cheese inside and the meat intact.

  • Preheat the grill. Start by preheating your grill to 400 degrees F with an indirect cooking zone. Charcoal grills will require two heat zones with coals on one side and none on the other. Propane grills will have one side of the burners set to high and the other side with the burners off. Pellet grills will simply preheat to 400 degrees F since they are already indirect grills.

  • Make your own juicy Lucy meatballs. Divide the ground beef into 12 equal portions. Press each portion into a patty slightly larger than the size of your buns. Turn the edges of 6 meatballs over to create a well in the meat. Fill the 6 tartlets with raised edges with a slice of Americano, mozzarella and sharp cheddar cheese. You may need to break the cheese slices into pieces to fit in the bowl. Cover each cheese-filled patty with a flat patty. Seal the edges of the meat well so that there are no holes or gaps.

  • Season Lucy's juicy burgers. Sprinkle each patty with the beef seasoning until it is lightly and evenly coated.

  • Grill the burgers. Place the stuffed burgers on the indirect heat side of the grill (the side where the coals or burners are turned off). Close the lid and cook your burgers for about 6 minutes. Open the lid and flip the burgers once. Close the lid and finish cooking the burgers until an internal thermometer reads 160 degrees F for well-done burgers. Remove meatballs to serving platter.

  • Toast the sandwiches. Place buns on direct-heat side of grill and cook 30 seconds to 1 minute until toasted to desired doneness.
