Kathiyawadi Stuffed Onion Recipe

  • To start preparing the Kathiyawadi stuffed onions recipe, peel the onions, keeping the base intact, make 4 cross-shaped cuts to help fill the filling. Keep aside.

  • For the filling, prepare a coarse, dry mixture of roasted peanuts, garlic cloves, coriander powder, red chili powder, cumin, turmeric and salt using a blender and transfer to a bowl.

  • Now add chopped coriander, about 2 teaspoons of oil to the filling mixture and mix well until the mixture becomes crumbly.

  • Take the spring onions and carefully fill the slits in each with the minced mixture.

  • Heat the oil in a non-stick pan over medium heat, place the stuffed onions on the surface of the pan and leave them to cook over low heat for 5 minutes.

  • Add about 1/4 cup of water, add the remaining filling mixture, close with a lid and let the onions steam. It will take about 10 minutes.

  • Brown sparingly if necessary in between. Make sure the onions are cooked well while still holding their shape.

  • Once the onions are cooked, turn off the heat and garnish the stuffed onion Kathiyawadi with coriander leaves.
