They are super easy! While many energy boosters require grinding toasted nuts or using a food processor, etc., we avoid all of this by using already finely ground nut flours. In our case almond flour and coconut flour. Just add everything into a bowl, mix and shape!

I love how the almond flour gives them an almost marzipan-like texture. Lemon juice and zest are added for that fresh zing while maple syrup gives them the perfect sweetness.

  • 1 cup (112 G) blanched almond flour
  • ¼ cup (30 G) Coconut flour
  • zest of one lemon
  • a nice pinch of salt
  • ½ teaspoon vanilla extract or vanilla bean powder
  • 3 spoons Maple syrup
  • 1 table spoon lemon juice or to taste

For cladding

  • grated desiccated coconut (small shreds) raw or toasted

Instructions

  • In a bowl add the almond flour, coconut flour and salt and mix very well. Press and stir until the lumps of almond flour are dissolved.

  • Then add the lemon zest, maple syrup, vanilla and lemon juice and mix very well. Press the mixture until all the almond flour is moistened, if it is not moist enough add a little lemon juice, a teaspoon at a time (or add maple syrup)

  • You want the dough to be a little crumbly so it can easily form into a ball but not sticky, so only add lemon juice if it isn't already in that state.

  • Taste and adjust the flavor. If it needs sweeter, add a little icing sugar to taste and mix. Then, with your hands, form balls. Add the shredded coconut to a shallow bowl. (I like to toast it on a skillet over medium-low heat until golden brown and then use it).

  • Then roll them in coconut. Set aside and serve. Store in the refrigerator for up to 5 days.

  • To prepare these lemon poppy seed bites; add 2 or 3 teaspoons of poppy seeds to the mixture. Alternatively, you can also add chia seeds to make energetic bites with lemon chia seeds.
