Garlic, Curry, and Maple Ramen Bowls are ideal for evenings when you're craving a delicious bowl of noodles, but are also looking for a comforting, healthy dinner. Tofu, portabella mushrooms, broccoli and a garlicky, sweet and spicy maple curry sauce make this perfect quick and easy vegan, gluten-free dinner full of color and even more flavor.

  • The day before, marinate the tofu and mushrooms. Press and slice the tofu and slice the mushrooms.

  • Make the marinade by combining soy sauce, maple syrup, sesame oil, garlic, red curry paste and ground ginger. Pour some into the bottom of an 8×8-inch baking pan. Arrange the tofu slices and mushrooms on the baking tray, preferably in one layer, but you can stack them if necessary. Pour the rest of the marinade over the top making sure all the pieces are covered. Cover and place in the refrigerator for 30 minutes or overnight if possible.

  • Heat the oven to 425°F. Uncover the marinated tofu and mushrooms and place the pan in the oven. Cook for 20-25 minutes. Arrange the broccoli florets on a baking tray, drizzle them with oil, sprinkle them with salt and place them in the oven to cook for about 15 minutes.

  • Meanwhile, cook the ramen noodles according to package directions. Drain and rinse. Set aside while the tofu and broccoli finish cooking.

  • Brown the sliced ​​garlic clove in a small pan with a drizzle of oil until golden. Set aside.

  • Once the tofu and mushrooms are ready, gently move them to a plate. Add the tahini and lime juice to the baking dish with the remaining marinade and stir to combine. Add the tagliatelle to the pan and stir to coat them with the sauce. Pour the noodles into 2-3 bowls. Top each bowl with broccoli, mushrooms and tofu. If the noodles seem too dry, add a little more soy sauce. Garnish each bowl with crispy garlic, green onion, sesame seeds, microgreens, and watermelon radish, if using. To be enjoyed immediately.
