Have you ever had a Japanese mochi waffle? They look like “normal” waffles, but the similarity ends there. They have a crisp, golden brown exterior and a soft, chewy, slightly sticky interior. Mochi waffles are a favorite in Japan.

Typically, they are made with rice flour, eggs, sugar and milk, the typical ingredients of waffles, with the exception of using glutinous (or sweet) rice flour instead of wheat flour.

Thanks to Eden Foods you can prepare mochi waffle at home with just one ingredient. You heard me right, ONE INGREDIENT!

Eden organic sweet brown rice mochi they're little squares of shelf-stable sweet brown rice mochi with nothing else added. They can be steamed, fried, baked and can be used to make waffles!

To make a waffle, simply cut or grate the mochi squares and cook them in a waffle iron. Quite easy.

I decided to put a southwestern twist on this Japanese classic by adding avocado and a quick black bean dip. Sort of waffle meets avocado toast meets tostada.
