  • 2 cups green corn (but can be canned or fresh);
  • 3 eggs;
  • 1 cup sugar;
  • 1 cup milk;
  • 1/2 cup vegetable oil;
  • 1 1/2 cups wheat flour;
  • 1 tablespoon of yeast;
  • A little bit of salt.

Preparation method

First, preheat the oven to 180°C and grease a round baking tray with butter and flour. Then, in the blender, add the corn, eggs, sugar, milk and oil, beat until smooth.

In a bowl sift the wheat flour and add the salt. Then pour the liquid mixture from the blender onto the flour and mix well until you obtain a uniform mixture.

Finally add the yeast, but be careful, mix gently until it is incorporated into the dough. Pour the mixture into the greased and floured pan and bake for about 40 minutes, or until a toothpick inserted into the center of the cake comes out clean.

Remove from the oven and only once it has cooled remove it from the mold. If you prefer, you can add some grated cheese or grated coconut to the dough to give it a special touch.

Creamy corn cake

Another way to prepare your own canned corn cake It has a creamy filling, as it uses a mixture of corn flour and parmesan cheese.

Therefore, this is an ideal recipe for afternoon coffee and will appeal to those who love a soft, non-dry cake, see the ingredients below:

  • 3 eggs;
  • 1 can of corn;
  • 2 tablespoons butter;
  • 1 ½ cups (tea) sugar;
  • 3 cups (tea) of milk;
  • 6 tablespoons of wheat flour;
  • 1 cup (tea) cornmeal;
  • 4 tablespoons of parmesan;
  • 1 teaspoon baking soup.

To prepare it, it is essential to put the corn in the blender, then add all the ingredients, except the cheese and yeast.

In this way we beat until it is very homogeneous and then we add the yeast and the grated parmesan, mix delicately until everything is incorporated.

Grease a mold with butter and flour, then pour the dough over it and bake in a preheated oven at 180°C, just like for the corn cake.
