For the roasted cauliflower:

  • 1 medium cauliflower cut into florets (phool cabbage), about 18 florets
  • 1 cup Yogurt
  • 2 table spoon cornstarch
  • 1 teaspoon cumin seeds (jeera)
  • 2 table spoon finely chopped coriander (dhania)
  • 1 teaspoon finely chopped green chillies optional
  • 2 teaspoon finely chopped ginger
  • ½ teaspoon salt
  • 3 Tablespoon oil for shallow frying

For the tomato sauce:

  • 2 Tablespoon oil
  • 1 teaspoon cumin seeds (jeera)
  • 2 teaspoon finely chopped ginger
  • 1 cup tomato puree, I used 3 medium sized tomatoes
  • ¼ teaspoon turmeric powder
  • ½ teaspoon red chili pepper powder (adjust to taste)
  • 2 teaspoon coriander powder
  • 1 teaspoon Garam Masala
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 2 table spoon coriander leaves, finely chopped
  • ¼ cup sliced ​​tomatoes

To garnish:

  • 2 green chili peppers, chopped for garnish
  • In a large bowl: Mix the yogurt, cornstarch, cumin seeds, coriander and green chilies until well combined.

  • Add the cauliflower florets to the yogurt mixture and mix well to evenly coat each floret.

  • Shallow fry the cauliflower: Heat the oil in a skillet over medium heat, adding just enough to cover the pan.

  • Add the cauliflower florets a little at a time and fry until golden brown and crispy on all sides.

  • Drain them and let them drain on absorbent paper to eliminate the excess oil.

  • Tomato Sauce: Mix cornstarch with 1/4 cup water in a small bowl and set aside.

  • Heat the oil in a pan over medium heat.

  • Add the cumin seeds until they break down. Add the tomato puree and ginger, stirring for a few seconds.

  • Add red chilli powder, coriander powder, turmeric and sauté for another 2-3 minutes, until the tomatoes release oil on the sides.

  • Add the cornstarch paste and cook until the gravy reaches a thin consistency, adding water if necessary.

  • Add the chopped tomatoes, sugar, garam masala and coriander, mix well and turn off the heat.
