Warmer weather is finally here, at least here in Florida! And those sunny days make me want to eat a little lighter. So it's time to start experimenting with salad recipes again.

Now I love a good salad. But not the sad kind of iceberg lettuce salad you get served on the side at a chain restaurant. I mean big, fresh salads full of flavorful ingredients. And this fennel salad does it Not disappoint.

Useful tips

Use a mandolin to slice the fennel. It's nearly impossible to get perfectly thin slices with a regular kitchen knife, which is why I recommend getting a mandolin for this task! A cheap one like this it will work and just have dinner.

Slicing fennel can be tricky! Especially if you've never dealt with it before. Start by washing the fennel and then cutting the part where the root should be. Then peel off any slightly hard layers. Then you will cut out the center of the fennel. Then start slicing very thin strips with the mandolin.

Season the salad just before serving. You don't want the arugula or orange slices to get soggy before you eat them.

Variations

Swap oranges for grapefruits. This will give a new flavor profile that is a little more tart.

Other ideas for crunchy toppings: Instead of walnuts, try sprinkling your fennel salad with some pecans or even pepitas for a different crunch factor.

Choose feta. Replace the parmesan with crumbled feta cheese. The spicy flavor is totally different, but it also pairs perfectly with fennel and oranges.

Make it vegan: Leave out the cheese for a vegan friendly version. It still has tons of flavor!

Shaved Fennel Salad

ingredients

For the salad:

  • 4 cups rocket
  • 1 fennel bulb
  • 1 big apple
  • 1 medium orange
  • ½ cup parmesan curls
  • ¼ cup Nuts

Instructions

  • Arrange the arugula on a large plate and set aside

  • Using a mandolin, thinly slice the fennel, then slice the apple and orange into thin slices using a knife

  • Place the fennel, apple, orange, parmesan and walnut over the rocket and set aside

  • Prepare the dressing by whisking together the olive oil, orange juice, red wine vinegar, maple syrup, parsley, salt and pepper until smooth.

  • Pour the dressing over the salad just before serving
