  • Browse: I like the puff pastry bought at the supermarket, which is found in the refrigerator section, but you can also find it in the freezer section.
  • Brie: Look for a wheel of brie in the deli section.
  • Cranberry sauce: you can use homemade blueberry sauce or canned. If using canned cranberry sauce, use the one with whole berries.
  • Pistachios: Buy the varieties with the shell and cut them lightly.
  • Egg: This is for brushing with egg.
  • Lemon pepper and kosher salt: To add flavor and color to the surface of the pasta.

How to cook puff pastry on the grill

Set your smoker to 425 degrees F with an indirect heat zone. If your grill has an elevated rack, install it. Pasta will cook better when it is farther from the heat.

Cherry and pecan wood are great choices for a subtle smoky flavor.

  1. FIRST STEP: Unroll the puff pastry sheet. Place it on a sheet of parchment paper and cut it into a 10×10 inch square. Add the brie wheel on top. Use a knife to scrape off the top layer of the brie crust. Then, pour the blueberry sauce on top. Garnish with pistachios.

  1. STEP THREE: Pull each section of puff pastry up and over the brie, making sure the sides are completely covered. I like to twist the puff pastry over the top for a little decoration.

  1. STEP FOUR: Beat the egg in a small bowl. Then, brush the dough with the beaten egg. Sprinkle with lemon pepper and kosher salt.
  1. STEP FIVE: Place parchment paper and wrapped pie crust in a cast iron skillet or baking sheet. Smoke at 425 degrees F for 35-40 minutes.

PRO TIP: Check on the pastry every 10-15 minutes to make sure it's baking evenly. Rotate the pan if you grill is hotter on one side. 
  1. STEP SIX: Once the pasta is cooked and golden, remove it from the grill.

How to Serve Brie and Cranberry Puff Pastry

Transfer the pan to a large plate with a trivet underneath. Add crackers, chips, or sliced ​​fruit like apples around the pan.

For a spicy twist, you can drizzle the brie with warm honey.

Place a spoon in the pan so that diners can scoop up the melted cheese.

The cast iron skillet will help keep the creamy brie cheese warm. If it starts to cool too much, you can put the skillet back in a 350 degree oven or smoker to re-melt it.

Warehousing

Store leftover cooked brie in an airtight container in the refrigerator for 3-5 days. You can reheat it in the microwave. This brie recipe does not freeze well.

  • Warming grid: Heat your smoker to 425 degrees F with an indirect heat zone. If you have an elevated grill, insert it into the grate.

  • Preparation: Cut the dough into a 25x25cm square and place it on a sheet of baking paper. Use a knife to scrape the top crust off the brie wheel.

  • Superior: Place the brie wheel in the center of the puff pastry. Spread the cranberry sauce on top. Add the walnuts on top of the sauce.

  • Cut: Use a knife to make 8 cuts in the puff pastry, starting from the outer edge and working toward the center (see image above).

  • Wrap: Pull each section of puff pastry up and over the brie, making sure the sides are completely covered. For added decoration, twist the puff pastry over the top and press to seal.

  • Brush: Beat the egg in a small bowl. Use a pastry brush to brush the browning onto the dough. Sprinkle the top with lemon pepper and salt.

  • Pan: Place the baking paper and the prepared brie in a cast iron skillet.

  • Smoke: Place the cast iron skillet in the hot smoker on the raised rack. Smoke for 35-40 minutes or until the pasta is cooked through and golden brown. Check the pasta every 15 minutes and rotate the skillet if necessary.

To make this in the oven, preheat your oven to 425 degrees F. Bake for about 30 minutes.
