Spicy Sichuan Cauliflower Recipe

  • To make the Sichuan Spicy Cauliflower recipe, cook the cauliflower with a little salt in a quarter cup of water. It should be blanched so that it is cooked but still firm. Drain and save the blanched water.

  • Heat oil in a pan. Add onions, spring onions (reserve some green spring onions for garnish), garlic, ginger, green chillies and a little salt. Sauté for a minute.

  • Add the cauliflower and stir gently over low heat.

  • Mix the cornmeal with about two tablespoons of water (if you have any left, use the cauliflower cooking water) and add it to the pan.

  • Now add Sichuan chili sauce, soy sauce and vinegar. Mix well.

  • Check the consistency of the sauce and, if desired, adjust with water. Turn off the gas stove.

  • Transfer the dish to a serving bowl and garnish with chopped green onions and toasted sesame seeds.

  • Sichuan Spicy Cauliflower Recipe is best served hot with Chinese fried rice or noodles.
