Stewed chicken is a truly hearty dish, especially when it’s cold. All the flavors make it so tasty. I used Sichuan green peppercorns, which are very floral. You can use Sichuan red peppercorns. Enjoy!

1 tablespoon spicy bean paste (doubanjiang)
1 teaspoon Sichuan peppercorns
a few pieces of brown sugar (or normal sugar)
Anise 4 stars
4 parts white green onions
4 bay leaves
2 cups of hot water
Shaoxing cooking wine (or chicken broth)
dark soy sauce
avocado oil or other oils
salt
