A bowl of strawberry banana ice cream.

This strawberry banana cream recipe is a dairy-free, vegan, plant-based, paleo dessert made with just FOUR ingredients that your whole family will love!

A bowl of strawberry and banana ice cream.

It's time to make a nice cream!

Now that summer is peeking around the corner, I'll share one of our family's favorite ways to cool down from the inside out: Strawberry Banana Cream, or as we affectionately call it, “2×4” ice cream. !

Why do we call it “2×4” ice cream? Because it only takes two minutes and four ingredients to whip it up. Plus, just like a 2×4, it will leave you breathless with its frosty fruitiness. Just remember to always remember to stock your freezer with ripe, sweet bananas and you're good to go. (Yes, this cold treat is basically frozen banana ice cream!)

If you have our red recipe book, Nom Nom Paleo: food for humans, you already have the recipe for this cold and everyone-pleasing frozen dessert: go to page 260! I make this beautiful custard all the time, so a few years ago I whipped up a batch that Henry (and his then eight-year-old photographer assistant, Lil-O) shot for the blog, and now everyone on the interwebs can make this homemade dessert without dairy products, without refined sugar and without ice cream maker!

  • Frozen ripe bananas: I always have a pile of overripe speckled bananas on my counter that I toss, peeled, into a zip-lock bag in the freezer. This way I always have frozen bananas on hand to mix into this delicious cream! Unfortunately, there is no good substitute for bananas in this recipe.
  • Frozen strawberries: There's no need to use fresh strawberries – frozen strawberries are picked and frozen at peak flavor and ready to be made into a delicious spread. (Yes, you can substitute another frozen fruit like pineapple, blueberries, or mango!)
  • Full fat coconut milk or coconut cream: Both unsweetened coconut milk and coconut cream work in this recipe, the fatter the creamier the cream! If you prefer, you can substitute another nut milk (e.g. almond milk), but coconut milk/cream gives this dessert the best texture.
  • Vanilla extract

  • Take frozen bananas and cut them into ½ inch coins.

  • Measure out 1 cup frozen strawberries and roughly chop.

  • Place the sliced bananas and strawberries in the work bowl of the food processor and pour in the coconut milk and vanilla extract.

  • Blend the mixture several times until the fruit is evenly chopped. Then blend it for a minute or two or until the mixture is smooth and creamy.

I love eating soft ice cream right away, but if you prefer to firm it up, you can store it in a sealed container in the freezer for several weeks. Just make sure to let the ice cream thaw for a few minutes so you can scoop it.
