That's right: THREE INGREDIENTS. You don't even need oil, salt or pepper! Literally place diced watermelon on a plate, sprinkle with feta cheese and fresh mint, and serve. It actually seems a little silly to write a post about this recipe because it's so simple and easy. Barely a recipe.

But here's everything you need to know about feta and watermelon salad. You'll want to eat it every day in the spring and summer!

And what a great excuse to use up some of the amazing amounts of mint I'm growing right now. If you're interested in growing your own, here's a great one resource on growing fresh mint!

Necessary ingredients

  • Diced watermelon
  • Crumbled Feta Cheese
  • Chopped fresh mint leaves

How to make feta and watermelon salad with mint

  1. First, take a plate. I recommend a platter here so you can serve the salad in layers, rather than mixing it in a bowl, which will make the feta and mint a little soggy.
  2. Arrange the ingredients on the plate, starting with watermelon, then crumbled feta, then fresh mint. I recommend crumbling the feta yourself from a block rather than buying it already crumbled – it tastes better that way. To do this, use the tines of a fork.
  3. Serve immediately.

Tips, tricks and FAQs

Can I make the feta and watermelon salad in advance?

I don't recommend preparing it in advance. The salt in feta cheese causes water to leach out of the watermelon, making it soggy. Don't throw away the leftovers: they're still delicious! But this salad is definitely best eaten right away.

How do I choose and dice a watermelon?

There are many ways to cut a watermelon and you can definitely buy it pre-cut to save time! But here's a great tutorial and the method I use for cut a fresh watermelon into cubes.

Can I use another type of cheese or herb?

Here you can use another crumbly savory cheese like queso fresco, cotija, or even blue cheese! I like mint with feta, but cilantro works well too. Here's a watermelon salad with queso fresco, cilantro and lime for a Southwestern twist.

Are there other ingredients I can add to this salad?

Safe! I love the simplicity of the three ingredients, but you can easily add cucumbers, red onion or green onion, a drizzle of olive oil and/or balsamic vinegar or glaze, some other type of melon… get creative!

  • 6 cups diced watermelon
  • 4 oz. crumbled feta cheese (see notes)
  • ¼ cup chopped fresh mint

  • Arrange the diced watermelon on a serving plate.

  • Sprinkle the crumbled feta cheese evenly over the watermelon, followed by the chopped fresh mint.

  • Serve immediately (see notes).

  • You can buy feta already crumbled, but I find it is always much tastier (less dry and more uniform in size) if you crumble it yourself from a block. I usually do this with the tines of a fork – it only takes a minute.
  • To save time, buy watermelon already cut. Or here it is how to cut a watermelon.
  • 1/4 cup fresh mint is a lot, but that amount works well in this salad. You can reduce it to 2 tablespoons if you don't want to buy that much mint, especially since fresh herbs can be expensive (luckily, fresh mint is easy to grow yourself!).
  • Do serve this salad immediately. The salt in feta cheese will cause the water to leach out of the watermelon, making it soggy after a while. Leftovers are still tasty, but serve them for your main event right after assembly.
  • Variations: You can add cucumbers, red or green onions, other herbs such as cilantro or dill, a drizzle of olive oil and/or balsamic vinegar or glaze, if you prefer.
