Zesty Sunshine Delight: Homemade Lemon Cookie Recipe

  • To start preparing the lemon biscuits recipe, sift together the flour, cornflour and salt and set aside.

  • In the bowl of a stand mixer with the paddle attachment, cream the butter, granulated sugar and vanilla until light and fluffy. Add the lemon juice and vanilla. Then continue to add the flour mixture and beat until all the ingredients are well combined. Once the ingredients are well mixed, add the lemon zest and beat for a few more minutes.

  • Scrape the sides of the bowl and form the dough into a ball. Divide the cookie dough into two portions and shape into cylindrical logs 1.5 inches in diameter. Wrap the logs in cling film and place in the fridge to cool and firm up for at least an hour.

  • Preheat the oven to 180 C. Prepare the baking tray by covering it with baking paper.

  • Once cool, remove the logs and place them on a floured surface. Cut them into 1/4-inch-thick rounds and place each round on the prepared baking sheet. Be sure to space them 1 inch apart to give them enough room to spread while cooking.

  • Place the baking sheet in the oven and bake the lemon biscuits for about 15 minutes or until firm and the edges are golden.

  • Remove from the oven and let the lemon biscuits rest on the baking tray for a few minutes, they will cook a little longer on the heat. Gently transfer them to wire racks to cool completely.

  • Once completely cooled, dip the lemon biscuits in icing sugar, store them in airtight containers and serve them with your cup of coffee or green tea.
